How Kringles Originated

Danish people began their migration to Racine in the late 1800s, and with them came their tradition of making Danish pastries. The most popular by far is the Danish kringle which made Racine Famous. Lehmann's has been carrying on this tradition for over 50 years.

 

How We Make Kringles

Lehmann's Kringle is made fresh daily, starting from scratch in our own kitchen. To achieve the flaky texture and sensational flavor of our famous authentic recipe, a time-honored procedure must be followed.
 
Layer upon layer of fresh golden Wisconsin creamery butter is folded and rolled into the pastry dough. For three days, it is rolled and folded and cured in the cooler at 40 degrees. This process is repeated twice, producing over 140 folds.

A mixture of brown sugar and butter is spread on the rich dough, and the filling is added. The edges of the dough are stretched, shaped, folded and tucked into an oval shape. A batch of 240 kringles is baked at 350 degrees for 20 minutes. Kringles are honey-glazed before rich creamy sugar or chocolate icing is applied. After cooling, Kringles are packaged in bakery bags and are now ready to be enjoyed.

 
Our mail order department started in the 1960s when former Racine residents, now relocated around the country, desired fresh Kringles. Racine companies also learned that the best Christmas gift was fresh Kringle from Lehmann's bakery.

This tremendous appreciation caused the mail order business to flourish, and we now make thousands of Kringles weekly -- up to 5,000 a day during the holidays!

Kringles are rich, yet light and smooth, and not too sweet. Stop in our bakery and enjoy the aroma of fresh-baked breads and over 100 fresh bakery treats that fill the air throughout the neighborhood.
 
Enjoy a chocolate eclair or a real cream puff while making your Kringle selections. Don't forget to take home a giant custard-filled 4-1/2 lb. decorated Napoleon -- dessert enough for 10 to 15 people.
